The simplicity of this dish is what makes it so appealing. The sweetness from the baby beets in the early fall season, combined with the pungent, heartiness of the blue cheese creates a warming effect.
1 Bunch baby beets, (about 8-10) washed very well
4 Tablespoons olive oil
2 Bay leaves
2 Dried red chiles
1/8 Cup water
3 Tablespoons crumbled Asher Blue Cheese
Salt and Pepper to taste
In a small roasting pan, place beets, 2 tablespoons olive oil, water, bay leaves, chiles, salt and pepper to taste. Roast in a 350 degree oven for 20-30 minutes (will depend on the size of the beets). When ready, remove from roasting pan and place on a serving dish. Drizzle with remaining olive oil and crumbled blue cheese.
